What it is
Bai Mu Dan is bud plus the first one or two leaves, withered and dried with minimal intervention. It looks like a pile of dried garden — silvery buds mixed with olive-green leaf — and weighs almost nothing.
In the cup
Honeysuckle, melon, hay and a light honey sweetness. Delicate but not thin, provided you use enough leaf.
Brewing
185 °F, four to five minutes, three grams — and three grams is a lot more than it looks like. White tea is extremely low density and this is the single reason people conclude white tea is boring. Weigh it once; the category transforms.
Value
The cost gap between this and Silver Needle is substantial and the flavour gap runs the other way for most people. Start here.

The most under-rated tea on this list. Cheap, gentle, sweet, and the antidote to the idea that white tea has nothing to say.
